I have enough lactose-intolerant friends who don’t take their lactose intolerance seriously enough (i.e. they eat the ice cream when they know they shouldn’t eat the ice cream) that I feel it’s my duty to put together a group of recipes that are yummy and safe featuring America’s favorite comfort food: mac & cheese.
Even if you have a perfectly fine tolerance for dairy, some choose to voluntarily eliminate it from their diets for things like improved digestion and clearer skin. Good for them, but if you asked me to stop drinking milkshakes I’d run far away.
