Hi, hello, my name is Anna and I'm one of the 40 million lactose intolerant Americans. But I'm also from the Midwest, and an insatiable craving for dairy is in my blood. As a result, I'm always on the hunt for dairy substitutes.
I'm not easy to please, though. I refuse to settle for weird, slimy "cheese" that has more in common with a wet sponge than real cheddar. I was raised on cheese curds, gosh darn it! There is no room in this lactose intolerant girl's fridge for embarrassingly bland dairy alternatives.
So when I heard there was a new milk substitute on the scene, I was amped. Ripple Foods is a line of milk and creamers made from yellow peas that runs between $3.50 and $4 in stores. Yes, it's pea milk. No, you are not the first one to chuckle at that. Yes, I am sick of hearing that joke.
After writing about the science of Ripple, one thing led to another and I ended up with a cooler full of the brand's various flavors. So, I decided to embark on a week of only drinking pea milk. Here's my lactose-free story.
