Raise your hand if you've ever made a special trip to Trader Joe's solely to stock up on cauliflower gnocchi. This is a pretty broad generalization, but we'd be willing to bet a lot of you have. This stuff is amazing, right? That said, it can be a big commitment to both your freezer and your wallet to keep yourself stocked all the time. So why not try to make your own?
There are oodles of simple recipes online, but we prefer this one that is truly as easy as it could be -- all you need is a handful of ingredients and a food processor! Essentially, you just combine a head of cauliflower, some flour and salt into your food processor, and when dough is formed, roll it out and cut it into little gnocchi pieces. Then comes the boiling and subsequent frying to get them to crispy perfection. The trick is to squeeze all of the water out of the cauliflower before forming a dough, so it'll hold its shape.
