What's New at Chipotle for the Hungry and Health-Conscious?

In an effort to expand their offerings to work with a wide range of diets, Mexican food chain Chipotle is testing cauliflower rice, one of its most requested menu items, in 55 select stores in Colorado and Wisconsin. While most food-service operators have been slimming down menus in an effort to reduce costs due to COVID-19, this is the third new menu item Chipotle has added in the past year.
